I love to cook! I love to post pictures, in fact many of you may have seen my #foodporn. Recently I was diagnosed with an autoimmune disease,so I have been playing around with my diet and finding some pretty good success. Peach blueberry crisp, paleo
3-4 Colorado peaches, Colorado peaches in my opinion are the very best. These can be fresh or frozen, but if you use frozen let them thaw out. Sliced into thin slices.
2 cups fresh blueberries, again you could probably use frozen that I used fresh.
1/2 teaspoon fresh lemon zest
1 tablespoon lemon juice
Mix this all together and put into a 9 x9 lightly greased baking pan. I used a little bit of coconut oil spray.
For the topping:2/3 cup almond flour
8 dried dates, pitted
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon ginger, optional if you want to little zing
1/2 teaspoon salt
Put into food processor and pulse until everything is well mixed and dates are finally chopped.
Add 2 tablespoons solid coconut oil. it is summer and yours is not solid, place it in the fridge for a few minutes until that does become solid. Put in with the dry ingredients and Paul's 5 to 10 times or iuntil lump free.
Sprinkle topping over the top of your fruit mixture, pressing and gently with the back of your spoon. Top with 1/2 cup sliced almonds, are used to Raw sliced almonds I found a Trader Joe's.
Preheat oven to 350°. Cover Chris with four oil and bake for 30 minutes move foil and bake for an additional 5 to 10 minutes or until lightly browned.

peach and cherries
Apples and pecans or walnuts
Mangos and macadamias
